About founder

Mrs. Kotarba obtain many skills and expertise by working in luxury hotels such as the Ritz Carlton Hotel, The Fairmont & Resorts  and the Intercontinental Hotel. Mrs. Kotarba was the Department head trainer for all hotels she worked for to help maintain and improve departments score in customer service, and created stronger teams under her leadership.
Mrs. Kotarba opened and executed her own restaurant into eight successful years.  With strong knowledge of health regulations Mrs. Kotarba welcome a new addition to the restaurant operation which is the Chicago Pierogi Wagon food truck.
Her restaurant and food truck were nominated by the Food Network for the best Tamales and the Best Pierogis in IL. Filmed in 2018 in the segment “Best Thing I ever ate” Featured several times in the Chicago Sun-Times and numerous magazines. 

Mrs. Kotarba strong passion for teaching and learning she Established National Food safety & Sanitation in 2018. She is Certified Instructor & Proctor City & State IL. and license in all 50 states  she is also a Part Time Health inspector.

Mrs. Kotarba obtains military background-with numerous awards by the US Army and the US Navy for leadership recognition and dedicated service.
